    David will greatly be missed. I just can't believe this sad news. My thoughts go out to his family. We would all like to say "thanks" to David for making our gluten-free visits to NYC truly wonderful!

    Hi Sonia - just to let you know, David, author of Gluten Free NYC passed away recently. There will be a memorial dinner on Sept 14 in NYC. To answer your question, yes, the U.S. FDA is using 20ppm as their upper limit to allow a GF label...although this isn't enforced for restaurants, only packaged foods sold commercially.

I offered myself to work as volunteer for cook gluten free food like a coop into the group for the gluten free people that attending to the group, I am From Argentina and I am trying to move to United States, I am specialized producing gluten free food since 3 years ago, with my wife we acheive great and exclusive products.     Celiac disease is an autoimmune disease due to high gluten antibodies
    Oral Tolerance is the one of the Great discoveries of Modern Medicine because it lowers production of Antibodies .

    The cases above are successful because subjects were children. In animal trials, research used 4 month old mice and 6 month old rats – the common denominator in animal tests and children's success is All subjects were young – their immune systems produce a lymphokine (factor produced by lymphocytes) and we include this together with Oral
    Tolerance to achieve success in Human Treatments.


    The mechanism of O.T. is made possible by the T Suppressor cell that lowers antibodies – in O.T., this cell lowers 3 antibodies -Immunoglobin M, Immunoglobin G and immunoglobin E & this is good news because Immunoglobins G & M are involved in most cases of Autoimmune diseases.

    The T cell needs 2 factors or signals for full activation:

    2.) the Second signal - is CD80 or CD86 - either one is enough to make the T cell go thru the changes that makes it a fully activated cell.

    In most humans with autoimmune disease, there is Second signal -CD80/86 but not enough to heal.


    However, there are other ways which produce that necessary 2nd signal and NO DANGER.
     
    The second signal is a blood factor &  can be induced by HERBS.
